Executive Chef – Luxury Boutique Hotel

About the role

Taprobane House is seeking an Executive Chef to lead the culinary team at its signature restaurant, Taprobane Table. This senior role combines creative menu development with rigorous kitchen management to deliver a distinctive Sri Lankan‑Western dining experience for hotel guests and local patrons.

Key responsibilities

• Design and execute innovative menus that reflect the "Sri Lankan infusion with Western style" concept across all meal periods and special events.
• Research and introduce new dishes and culinary techniques aligned with current gastronomic trends.
• Oversee all kitchen operations, ensuring seamless workflow, hygiene, sanitation, and compliance with HACCP and local food‑safety regulations.
• Maintain equipment, optimise kitchen layout, and enforce safety standards.
• Manage food costs, inventory, purchasing, waste reduction, and budgeting to achieve profitability without compromising quality.
• Collaborate with Operations, Management, and Internal Audit for accurate costing and variance reporting.
• Recruit, train, mentor, and motivate a high‑performing kitchen team.
