Sous Chef – Italian Cuisine

About the role

The Sous Chef will support the overall kitchen operations at Anantara Peace Haven Tangalle Resort, ensuring the Italian kitchen delivers authentic, high‑quality dishes that delight guests.

Key responsibilities

• Assist in planning and developing Italian cuisine menus and recipes, maintaining authenticity, quality, consistency and presentation.
• Direct and coordinate daily operations of the Italian kitchen to ensure smooth service.
• Control food and labour costs, manage purchasing, portion control and inventory while minimizing waste.
• Ensure all food products meet the hotel’s quality, presentation and F&B standards.
• Lead, coach and train kitchen team members to uphold high culinary standards and teamwork.
• Maintain the highest standards of food hygiene, safety, cleanliness and health & safety.
• Continuously review operations and recommend improvements to enhance the Italian culinary product and guest experience.
