Hygiene Officer – Hotel & Resort

About the role

Responsible for monitoring and maintaining the highest standards of hygiene, sanitation, and food safety across the hotel. The Hygiene Officer ensures compliance with hotel policies, HACCP principles, statutory requirements and international food safety standards, supporting a safe and hygienic environment for guests and team members.

Key responsibilities

• Conduct regular hygiene and sanitation inspections across kitchens, restaurants, staff facilities, storage areas and other operational zones.
• Monitor food handling, preparation, storage, temperature control and personal hygiene practices.
• Ensure compliance with HACCP procedures, food safety standards and hotel hygiene policies.
• Identify hygiene risks and recommend corrective and preventive actions.
• Maintain accurate inspection records, checklists, temperature logs and related documentation.
• Audit cleaning and sanitation practices and follow up on deficiencies.
• Monitor pest control activities and coordinate with relevant departments and service providers.
• Support food safety and hygiene training for culinary, F&B, housekeeping and other teams.
• Inspect food storage areas to ensure proper stock rotation, labeling, cleanliness and safe storage.
• Assist with investigations of food safety incidents, guest complaints and hygiene‑related concerns.
