Executive Chef

About the role

The Executive Chef will lead all culinary operations for Esna Holdings in Colombo, overseeing menu planning, recipe creation, and ensuring consistent food quality across all services. This full‑time, on‑site position requires managing kitchen staff, inventory, and supplier relationships while driving innovation in the dining experience.

Key responsibilities

• Oversee all culinary operations and ensure consistent food quality and presentation.
• Plan and develop menus and create new recipes aligned with customer expectations.
• Supervise kitchen staff, organize work schedules, and provide training and performance management.
• Enforce food safety, hygiene, and sanitation standards throughout the kitchen.
• Manage inventory, control food costs, and coordinate with suppliers for timely deliveries.
• Collaborate with senior management to design menus that support business goals.
• Monitor kitchen performance, resolve operational issues, and implement continuous improvements.
• Drive culinary innovation by introducing new dishes and service concepts.

Required profile

• Proven ability to design menus, develop recipes, and maintain high culinary standards.
• Strong leadership experience, including staff supervision, training, and conflict resolution.
• In‑depth knowledge of food safety regulations, hygiene practices, and kitchen sanitation procedures.
• Experience in inventory management, cost control, and supplier coordination.
• Ability to thrive in a fast‑paced environment, manage multiple priorities, and stay composed under pressure.
• Excellent communication and collaboration skills for working with management, front‑of‑house staff, and suppliers.
• Formal culinary education or certification from a recognized institution (highly beneficial).
• Prior experience as an Executive Chef or Senior Chef in hotels, restaurants, or catering operations.
