Head Baker

About the role

The Head Baker at Silversea Cruises leads onboard bakery operations, delivering luxury‑level artisan breads, pastries and specialty dietary products across all dining venues.

Key responsibilities

• Lead production of breads, pastries, and bakery items across all onboard venues, including special events.
• Create high‑quality artisan breads, laminated pastries, gluten‑free and regionally inspired specialties.
• Ensure compliance with USPH, HACCP, ILO, ISO and maritime safety standards.
• Manage inventory, control portions, reduce waste and oversee stock levels.
• Train, supervise and mentor bakery staff, fostering professional growth.
• Engage with guests during culinary events and demonstrations.

Required profile

• Valid STCW95 certification and appropriate regulatory certifications.
• Proven experience as Head Baker or Senior Baker in luxury hotel, Michelin‑starred restaurant or cruise line.
• Culinary degree or equivalent certification preferred.
• Physically and medically fit with high moral integrity.

Required skills

• Advanced knowledge of artisanal bread baking, laminated doughs and modern dietary alternatives.
• In‑depth understanding of USPH, ILO, ISO, HACCP and maritime safety procedures.
• Strong leadership and organizational abilities in high‑volume fine‑dining production.
• Proficiency with Microsoft Office, Fidelio and MXP systems.
